Double Chocolate Zucchini Muffins

Yields 24 muffins

Ingredients

  • 2 cups grated zucchini 

  • 1 ¼ cup unsweetened applesauce

  • 3 cups all purpose flour

  • ½ cup cocoa powder

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • 1 tbsp vanilla

  • 2 eggs

  • ½ cup sugar

  • ¼ tsp salt

  • 1 cup chocolate chips

  • 1 cup chopped pecans, optional

Preparation

  1. Preheat oven to 350 degrees fahrenheit.  

  2. Finely grate zucchini and set aside in a colander to remove any excess liquid. 

  3. Combine all dry ingredients in a bowl and set aside. 

  4. In a mixing bowl, combine eggs and sugar and beat on medium speed for 2-3 minutes. Add in applesauce and vanilla and mix until combined. 

  5. Slowly add in the dry ingredients and mix until combined. Stir in zucchini, chocolate chips, and pecans. 

  6. Fill muffin tins ⅔ full with batter. Bake for 18-20 minutes or until a toothpick can be inserted and comes out clean.
