Double Chocolate Zucchini Muffins

Yields 24 muffins
Ingredients
2 cups grated zucchini
1 ¼ cup unsweetened applesauce
3 cups all purpose flour
½ cup cocoa powder
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 tbsp vanilla
2 eggs
½ cup sugar
¼ tsp salt
1 cup chocolate chips
1 cup chopped pecans, optional
Preparation
Preheat oven to 350 degrees fahrenheit.
Finely grate zucchini and set aside in a colander to remove any excess liquid.
Combine all dry ingredients in a bowl and set aside.
In a mixing bowl, combine eggs and sugar and beat on medium speed for 2-3 minutes. Add in applesauce and vanilla and mix until combined.
Slowly add in the dry ingredients and mix until combined. Stir in zucchini, chocolate chips, and pecans.
Fill muffin tins ⅔ full with batter. Bake for 18-20 minutes or until a toothpick can be inserted and comes out clean.
